Gardener's Pie

3 tablespoons oil

2 onions peeled and sliced
3 cloves of garlic (optional)
2lb courgettes washed,trimmed,and cut into 1/2 " slice
1lb tomatoes skinned and chopped
2 tablespoons tomato puree
3-4 basil leaves chopped
salt & pepper


For the Topping:


3oz fresh breadcrumbs

2oz grated cheese
2oz chopped mixed nuts or sunflower,pumpkin seeds


Method:
 
Set oven to 180°C/350°F/ Gas mark 4.
Heat oil in a large saucepan, add garlic if using onions and cook gently for 5 minutes.

Add all the other ingredients, season an cook for a further 5 minutes.
Turn into ovenproof dish.
Mix together topping ingredients and sprinkle evenly over the vegetables.
Cook for about 30 minutes until topping is golden.

Serve hot with crusty bread or as an accompaniment to meat dishes.


The crumble topping can also be used as a topping for chicken cooked in a sauce.
