Irene's Award-winning Prune & Chocolate Ice Cream

This recipe won the Cadwalader's/Daily Post ice cream competition in November 2008.  Irene is a producer with Rhos-on-Sea Country Market.

1 full egg
3 egg yolks
3 oz castor sugar
1/2 (one-half) pint whole milk
9 oz dark chocolate, broken into pieces
1/4 (one-quarter) pint double cream
4 oz ready-to-eat prunes, finely chopped

Beat together the eggs and sugar
Add almost boiling milk whilst still beating
Stir over pan of simmering water until slightly thickened
Remove from heat and add chocolate
Stir until melted and mixed
Leave to cool
Whip cream until slightly thickened
Fold into chocolate mixture
Add chopped prunes
Freeze, stirring after one hour
